Oatmeal Raisin Cookies
I love, love, love oatmeal cookies, but there is one catch. They must have raisins in them. Raisins add a chewy, sweetness to oatmeal cookies that just can’t be beat. This recipe calls for 3 cups of raisins & they make these cookies absolutely perfect. If you want to mix it up, you could substitute some of the raisins for chopped dates or dried cranberries for a different flavor profile.
2 Sticks Soft Butter
3/4 cup Brown Sugar (packed)
3/4 cup Sugar
2 TBsp Vanilla
2 Eggs (room temp)
2 Cups Flour
1 1/2 tsp Salt
1 tsp Baking Soda
1/2 tsp Baking Powder
2 tsp Cinnamon
2 Cups Rolled Oats
1 1/2 Cups Raisins
1 1/2 Cups Golden Raisins
You don’t need any special equipment to make these cookies, you can mix everything by hand. Using a stand mixer makes it easier and less of an upper body workout if you have one. If using a stand mixer, use the paddle attachment. Cream together the butter, both sugars, vanilla and eggs.
In a small bowl, whisk together the flour, salt, baking soda, baking powder and cinnamon. Slowly add the dry ingredients into the wet ingredients. Combine until just mixed. Add in the oats and both types of raisins.
On parchment lined cookie sheets, using a large scoop, scoop nine cookies per sheet & press each cookie down slightly. Cook for 14 minutes at 350 degrees. Makes 26 large cookies. Let cool completely on a rack before storing in an airtight container. Enjoy!
