♥ Colleen’s Sour Cream Cookies ♥
I have a lot of wonderful memories from when I was growing up. Many of those memories involve my best friend Erica. We met almost thirty years ago, and to be completely honest, I can’t imagine my life without her. A prominent figure in many of those fond memories of Erica and I, is an amazing woman named Colleen, Erica’s mom. In our hometown, Colleen was known for her amazing skills in the kitchen.
I think most people have a certain dish that just makes them smile, for me it’s Colleen’s Sour Cream Cookies. I can still remember the very first time I tried them. Erica and I loved hanging around the kitchen while Colleen baked. You always knew you were in for a real treat when she was at work in the kitchen. Her food was like a big hug, something that always made you just feel so good. These cookies are pure little fluffy pockets of heaven.
Sadly, this wonderful woman recently passed away and everyone who knew her has felt the loss. She was so kind, funny and had the biggest heart you can imagine. We will all miss her. Sharing this delicious recipe is just one small way for her legacy to live on. I hope you’ll enjoy these sweet treats as much as I do. I love you Colleen♥
The very first time you make this recipe, I’d cut it in half just to get a feel for how many cookies it makes (20 or so). I only make a full batch when I need a whole lot of cookies.
1 cup butter, softened
3 cups sugar
4 large eggs
2 tsp vanilla
6 cups flour
2 tsp salt
1 tsp baking powder
1 tsp baking soda
2 cups sour cream
Cinnamon & sugar for dusting
In a large bowl, cream the butter, sugar and eggs together with a hand mixer until smooth and fluffy. Add in the vanilla, salt, baking powder and baking soda until just blended. Alternate adding the flour and sour cream until both are fully incorporated. Using a large scoop, drop onto parchment lined cookie sheets. Dust each cookie with cinnamon & sugar. Bake for 12 minutes at 350 degrees. Once baked, remove from oven and let cool completely. Store in an airtight container for three days. Enjoy!
