The Art of Pie


 

Like many Americans, I grew up eating pie a few times a year. Thanksgiving was the primary event but sometimes we’d see a pie at Christmas too. I’ve started embracing the many possibilities when it comes to pie. There are so many incredible flavors and designs to choose from. I’m just getting started, so hopefully I’ll be adding more content in the near future.

All pies cost $35. This may seem steep but a lot of work goes into making pies from scratch. It’s a multi-day project with an absolute sweet reward at the end of it. Most pies are made with an all butter crust, using high content butterfat for ultimate flavor and flakiness. Some pies are made with cookie crusts, such as graham cracker, chocolate cookie or ginger snap.

Banana Cream

A favorite of mine from childhood. This pie can be made with an all butter crust or a graham cracker crust. It is filled with a banana pastry cream, fresh bananas and then topped with a vanilla whipped cream.

Cherry

I love the sweet and tartness of a good cherry pie. This pie is made with an all butter crust then filled with a variety of sweet and tart cherries. There are so many beautiful options when it comes to the top crust. You can go traditional or even add a crunchy, buttery streusel instead.

Chocolate Cream

This is one of my husband’s favorite pies. I sue a graham cracker and chocolate cookie crust. It is filled with a layer of fudge pastry cream and a layer of milk chocolate pastry cream. On top is a vanilla whipped cream and chocolate shavings. The perfect choice for all those chocoholics out there

Pumpkin

For me, it’s just not Thanksgiving without a pumpkin pie. There is something so comforting about a pumpkin pie. This all butter crust is filled with a whipped pumpkin and cream cheese filling. This makes the pie lighter and creamier than your traditional pumpkin. It is also packed with all those lovely warm spices, cinnamon, nutmeg and clove. I top it off with crisp, buttery decorations. A dollop of whipped cream on the side would be perfection.

Apple

The classic apple pie is understated but so delicious. I fill an all butter crust with a combination of Gala and Granny Smith Apples, combined with butter, brown sugar, cinnamon, nutmeg and cloves. I love topping it with a crunchy, toasted pecan streusel.

 

 

 

 

 

Pecan

Ooey, gooey and all around delicious. You know it’s decadent when you add a scoop of vanilla ice cream to cut the sweetness. Loaded with toasted pecans and a buttery crust, this is one you might hide from the kids.
