Peeling Kiwi

 

Using this technique to peel kiwi helps preserve as much of the delicious fruit as possible. Kiwi are full of vitamin C, vitamin K, vitamin E, folate, and potassium. They also contain antioxidants and are a good source of fiber. Their sometimes fuzzy brown peel is edible (lots of fiber), though most prefer to peel the kiwi before eating it. Eating just one kiwi gives you more than 100% of your recommended daily intake of vitamin C.

First wash & dry the kiwi. On your cutting board slice off both ends, you should feel a slightly hard stem like portion in each. After removing the ends, slice the kiwi in half width wise. Hold the kiwi on your cutting board or in your non-dominant hand and insert a small spoon right along the edge of the peel. Push the spoon down until the tip of it peeks out at the bottom. Slowly slide the spoon around the entire edge of your kiwi. Once you’ve made it all the way around, the fruit should slide right out of its peel. Sometimes the peel will be so thin that it might rip. Don’t worry about it, just slide the skin back under the peel and keep going. You can also use the beater portion from a hand mixer to remove the fruit in large chunks.
