Chewy Banana Oatmeal Cookies

 

I’d been looking for other ways to use my over-ripe bananas and this totally fit the bill. These cookies are chewy & thin, and have tons of banana flavor. They tend to spread even if you chill the batter, so make sure you give them plenty of space on the cookie sheet when baking.

 

  3/4 cup salted butter, softened (works great with vegan butter)
1 cup brown sugar, packed
1/2 cup sugar
1 egg
1 tsp vanilla 
1 cup mashed bananas (2 bananas)
1 1/2 cups all-purpose flour
2 tsp cinnamon
1 tsp baking soda
2 tsp cornstarch
                                     3 cups old fashioned oats                                   

 1/2 cup toasted/chopped nuts (pecans, walnuts or pistachios)

 

Combine the butter, brown sugar, sugar, egg, vanilla and mashed bananas until smooth. Add flour, cinnamon, baking soda, and cornstarch until just combined. Stir in oats & nuts. Using a small scoop or tablespoon, place 9 mounds of dough on parchment covered cookie sheets (cookies will spread). Bake at 350 degrees for 10 minutes. Let cool completely before storing in an airtight container. Enjoy!
