Green Tea Rice Crispy Treats

I love Rice Crispy Treats and I’ve started playing around more and more with different flavor combinations. A simple trick to change up the flavor profile of any cereal treat is to brown the butter when melting it. This gives it a nutty flavor that pairs so well with just about anything you can imagine. This treat is unusual and the matcha powder and white chocolate are the perfect bitter/sweet combo. To make this gluten-free, ensure you use Puffed Rice Cereal that is gluten-free. Rice Krispies brand contains malt & isn’t gluten-free.

With your fingers spread butter in a 9 x 13 pan, ensuring to get all the corners really well, then set it aside. In a large pot, melt the butter over medium heat until it turns a light brown color. Add the marshmallows and stir occasionally with a wooden spoon. Once completely melted, remove from heat and quickly stir in the salt & matcha powder and once combined add the cereal. Stir until all cereal is coated then let stand for 2-3 minutes.

Quickly fold in the white chocolate chips then scrape the mixture into your buttered pan. Press into the pan with the spoon then rub a little butter onto your hands and press the mixture down until evenly distributed. Let stand until completely cooled before cutting into desired squares. Store in an airtight container for 2-3 days. Enjoy!

 

5 Tbsp Butter (plus extra for pan)

16 oz Mini Marshmallows

8 cups Gluten-Free Puff Rice Cereal

1 cup White Chocolate Chips

Big Pinch of Salt

2 Tbsp Matcha Powder
