Hermit Bars

 

The first time I tried these bars, I thought they were going to be blahhhhh. Man was I wrong. They’re downright addicting and they get better the longer you keep them around (flavors intensify). If you love fall flavors, you’ll adore these. If raisins aren’t your thing, replace them with any type of dried fruit.

 

Makes 9-12 bars

 

9 TBsp soft butter

2 TBsp canola oil

3/4 cup brown sugar

1/4 cup molasses

1 large egg

1 cup AP flour

3/4 cup whole wheat flour

1/4 cup flaxseed meal

1/2 tsp ground cloves

2 tsp cinnamon

2 tsp ground ginger

1/2 tsp salt

3/4 cup raisins

***For a healthier version use 4 TBsp oil & 1/2 cup unsweetened applesauce instead of butter

 

In a mixer with the paddle attachment or a medium bowl with a hand mixer, combine butter, oil, sugar, molasses and egg until smooth. In a small bowl whisk all the dry ingredients together. Slowly add the dry ingredient to the wet, once combined mix in the raisins. Pour into a well oiled 8 x 8 baking pan and bake at 375 degrees for 20-25 minutes. Let cool, turn out on to a cutting board and cut into bars. Can be stored in an airtight container for up to a week. Enjoy.
