beef with broccoli

Beef with Broccoli has always been my go-to whenever I eat Chinese. This recipe is surprisingly easy, delicious and you control the beef to broccoli ratio.
This recipe will serve 3 hearty portions, double or triple it for a bigger crowd.
1 to 1 1/2 LB Flank Steak or Flat Iron Steak (or any beef cut you choose)
1 TBsp Sesame Oil
3 Garlic Cloves-minced
1/2 a Small Onion- small dice
1 1/2 cup Beef Stock/Broth
1/3 cup Soy Sauce
1/3 cup Brown Sugar
2 TBsp Cornstarch
1 Large Head of Broccoli-bite size pieces
1 cup Quinoa (or any whole grain you prefer- rice, farro, barley)
Optional* Toasted Sesame Seeds for Garnish
First get your grain cooking according to the package directions. Next, cut your broccoli, onion and garlic and set them aside.
Cook your meat of choice whole in a large skillet with a little oil. I really like flank steak because it cooks quickly and is super flavorful. I like to buy a large flank steak then cut it into two or three pieces, freezing the extra pieces for future meals. Remove any excess fat or silver skin from your meat, pat it dry with a paper towel then sprinkle with salt. I prefer my beef medium rare, but you choose your temperature. After cooking your meat, remove it from the heat and let it rest on a cutting board (this helps it retain its moisture).
In the same skillet add the sesame oil and cook your onion and garlic until soft and caramelized (med heat). Add the beef stock (set 1/4 cup aside), brown sugar and soy sauce. In a small bowl mix the 1/4 cup beef stock and the cornstarch until smooth. This will be the thickener for your sauce. Whisk the thickener into the sauce and continue to whisk occasionally as the sauce cooks and thickens.
Toss the broccoli into your sauce and cook until it just starts to soften. Slice your beef into thin, bite size pieces, going against the grain when you cut. Toss the beef into your sauce then portion your cooked grain into bowls. Ladle the sauce on top and sprinkle with toasted sesame seeds. Enjoy!
