This recipe makes 3 large servings
- 1 Onion- thinly sliced
- 4 Garlic Cloves- minced
- 2 Bell Peppers (I prefer red or yellow)- thinly sliced
- 1 or 2 Jalapenos- diced (If you like it hot add Thai chili peppers or a serrano instead)
- 1 LB Ground Chicken (you can also use turkey)
- 3 TBsp Fish Sauce (you can use soy sauce instead but it doesn’t give nearly as much flavor)
- 2 TBsp Water
- 2 TBsp Sugar
- 3 TBsp Oil
- 1 Cup Quinoa, rice or other grain
Thai Chicken
This dish is not only delicious and easy to make, but it’s also super healthy. I call that a win, win, win! I got this recipe from my Chief when I was still on active duty in the Air Force. He knew how much I loved to cook & graciously shared this family favorite with me. This is a great recipe to try if you’re interested in expanding your knowledge of Asian flavors. Fish sauce is so delicious but be prepared that it doesn’t smell very pleasant, especially as it starts to heat up. I promise it’s delicious!!!
First, start cooking your chosen grain according to package instructions. I prefer quinoa over rice for its nutritional content, but feel free to use whatever grain you like. In a small bowl, mix the fish sauce, water and sugar then set aside. Next, heat up the oil in a large skillet. Add the sliced onions and cook for 2-3 min. Once they start to soften, add the garlic and jalapenos and cook for another 2-3 minutes. Add in the ground chicken and break it up into small pieces as it cooks. Once the meat is thoroughly cooked add the sauce mixture and mix everything together really well. Add in the bell peppers and cook until they reach the desired softness. If you like them quite crunchy, you’ll only want to cook them for 3-4 minutes. Spoon over your cooked grain. This completed dish freezes beautifully. Enjoy!
