Garlic Shrimp Pasta

 

 

Okay, so this is seriously the easiest pasta dish I’ve ever come across, and it is so, so delicious. All you need is a handful of ingredients and it comes together in less than 20 minutes. Buying the shrimp already cleaned will save you a lot of time. Look for them in the frozen seafood aisle. This recipe will serve 3-4 people. 

 

1 package spaghetti (I really like Barilla Veggie Spaghetti)

10-16 oz Medium Raw Shrimp (deveined and tails removed)

4-6 Garlic Cloves-minced

3 cups Baby Spinach- rough chop

1/3 cup Olive Oil

1/4 tsp Red Pepper Flakes (more if you like it spicier) 

Salt 

Get a large pot of heavily salted water going first. I always check my shrimp to make sure they’ve been properly cleaned, sometimes remnants get left behind that aren’t very appetizing. Pat your shrimp dry with paper towels, this will prevent them from boiling, when you cook them. Mince your garlic and roughly chop your spinach. Once your water has started boiling, add the pasta and cook according to the directions.

While your pasta cooks, heat the oil in your biggest skillet on medium and add your garlic. Add several big pinches of salt and your red pepper flakes. Cook until just soft then add your shrimp. Cook until the shrimp just turn pink and start to curl up. Add the spinach for the last minute of cooking. Ideally, you time it right so your spinach is just wilted then you drain your pasta and pour it directly into the skillet. Toss the pasta to completely coat. You may have to add a little more oil. Taste and add salt as needed. Serve in large bowls.The garlic is really the star in this dish. For all the garlic lovers out there hope you love it as much as I do. Enjoy!
