In a small pot cook your choice of grain according to package instructions. While this cooks brown your choice of meat in your largest skillet. Add your seasoning packet to the meat or season with your own mixture. Set meat aside in a bowl.
Add a small amount of oil to the same skillet and cook your peppers, onion and garlic. Once they’re soft, drain and rinse your beans and add them to the mix. Drain the corn and add it in as well. Your grain should be finished by this time.
Add the meat back into the stir-fry mixture and make sure everything is well combined. Taste & add salt as desired. You can add your cooked grain into the mix and combine, or portion the grain out into individual bowls and top it with your stir-fry. Garnish with chopped cilantro & scallions. Leftovers freeze great, enjoy!
Mexican Stir-Fry
This dish is delicious, packed with veggies & simple to make. You’re in control of the heat level, meat choice and grain choice, so it’s super versatile. This is a perfect weeknight meal that serves four.
1 LB Ground Meat (I use chicken, turkey or beef)
1 cup Whole Grain (I prefer quinoa, farro or brown rice)
1 can Black Beans (or pinto or kidney beans)
1 small Onion- small dice
3 Garlic Cloves- minced
1 Red Bell Pepper (or Poblano, Anaheim, etc.)-pick according to your taste/heat preference
1 Jalapeno- small dice
1 Small Can of Corn (7oz or smaller)
1 Packet Fajita, Taco or Burrito Seasoning or season it yourself with:
1 TBsp Ground Cumin
1 tsp Garlic powder or salt
1 tsp Onion powder or salt
1 tsp Black Pepper
1 tsp Dried Oregano
Salt to taste
Cilantro & Scallions to garnish
