Pasta with Vodka Cream Sauce
This is an incredibly easy pasta dish with a depth of flavor that tastes like it took hours to prepare. Use any pasta you like.
Serves two people
2 TBsp oil
2 garlic cloves, minced
1 shallot or 1/2 a small onion, minced
1 cup vodka
1 cup chicken broth
1 cup crushed tomatoes
1 cup heavy cream
16oz favorite pasta
Sauce comes together quickly, so get salted water boiling for pasta first and cook pasta while sauce is going. In a small sautee pan over medium heat, cook garlic and shallots until soft. Add tomatoes and vodka and cook for five minutes. Add broth and heavy cream and cook until sauce thickens, stirring occasionally. Drain pasta and pour sauce over, toss to coat. Salt and pepper to taste. To bulk this recipe up, you could also add cooked sausage, chicken breast or a variety of other ground meats. Enjoy.
