Black Bean Brownies
I was totally skeptical when I baked these for the first time. Like you’re probably thinking right now, I thought for sure they’d just taste like black beans. If I hadn’t know they were made with beans, I never would have guessed. This is a decadent gluten free option that is sure to please .
Serves 9-12 small brownies
1- 15oz can black beans, rinsed and drained
3/4 cup chocolate chips
4 TBsp canola oil
3 large eggs
3/4 cup brown sugar
1/2 cup cocoa powder
1 tsp vanilla
1/2 tsp baking powder
1/8 tsp salt
Blend beans, 1/2 cup chocolate chips and oil in a food processor or blender until smooth. Add remaining ingredients except for final 1/4 cup chocolate chips and blend until combined. Line an 8 x 8 baking pan with parchment paper then oil. Spread batter over parchment paper and sprinkle with remaining chocolate chips. Bake at 350 degrees for 15 minutes. . Let cool, turn out onto a cutting board and cut into desired size. Enjoy.
For a decadent boost, you can combine 1/4 cup creamy peanut butter, 2 TBsp oil (canola or coconut) and 1 TBsp powdered sugar. Drizzle over the cooled brownies before cutting them into bars (as pictured).
