Nutella Rice Crispy Treats
These bars are sinfully delicious, super easy to make and gluten free! I always lick the bowl & spoon with this one.
Serves 10-12 people (if you’re lucky)
6 TBsp butter
16oz mini marshmallows
1/2 tsp salt
1 cup Nutella (plus extra for drizzling or spreading)
6 cups Gluten-Free puffed rice cereal
Cook butter in large pot until it turns a brown, caramel color (this imparts a wonderful nutty flavor). Add marshmallows and salt, stirring until completely melted, lower heat and add Nutella and stir until smooth. Remove from heat and stir in cereal two cups at a time. Press mixture into a buttered 9 x 9 pan or a rectangle cake pan if you want thinner bars.
Heavily butter your hands (see picture) and press the mixture down into the pan. This is much easier than using a spoon and it won’t stick to your hands because of the butter. Let completely cool on the counter. Once cooled, turn over on a cutting board. You can cut the bars to whatever size you want and serve as is.
If you want to get really decadent, scoop half a cup of Nutella into a small ziploc bag or pastry bag. Zip the bag closed then massage the bag with your hands. This will warm it up and thin it out (don’t microwave it). Once you can feel it is a looser texture, snip one corner and gently squeezing, drizzle over the uncut treats then cut them as desired. You can also spread a thin coat of Nutella over the top of the bars before cutting. Place cut bars in an airtight container, and keep at room temperature until you serve them. Enjoy!
