Pineapple Salsa

This is my go to when serving salmon but it is also great with chicken and pork tenderloin.

 

Serves two people

2 cups fresh pineapple, thinly sliced, bite size pieces 1/2 a small red onion, minced

1 jalapeno, deseeded and minced

1 garlic clove, minced

Cilantro, small handful, minced

2 TBsp fresh lime juice

Pinch of salt

 

Toss all ingredients together, cover and refrigerate until used.
