Thai Kale Salad

I love this salad and it pairs so well with just about anything…chicken, beef, pork or fish. If you aren’t familiar with Mirin (sweet rice wine), don’t worry, they sell it in the Asian aisle at all grocery stores. You can tailor the dressing to be sweet, savory or tangy, you choose. Make it as directed then add a little more of the flavor punch that you want. The peanut butter dressing works great for a dipping sauce for chicken as well. This will easily serve four people & tastes great the following day.

  1 bunch kale -bite size pieces

1 apple (sweet)- sliced thin/bite size pieces

1/4 cup cilantro- diced

1/4 cup Green Onion- diced

Dressing:

1/4 cup creamy peanut butter

1/4 cup oil (canola or olive)

2 TBsp Mirin

1 TBsp lime juice

Pinch of salt

2 TBsp honey

Chopped toasted peanuts to garnish

Wash your kale, cilantro, apple & green onion and pat dry. Remove the thick stem from the kale then cut each into bite size pieces. Whisk all of your dressing ingredients together until smooth and taste it. If you want it sweeter add more honey, tangy add more mirin, sour add more lime juice. Pour over your salad in a large bowl and mix really well until the salad is coated. Store in an airtight container in the fridge until you’re ready to serve. Top with chopped peanuts. Enjoy!
