Pancakes
This recipe makes delicious basic pancakes. It works great with any toppings you chose such as syrup, powdered sugar or the blueberry compote pictured here. Look under sauces to see how to make this topping (delicious over ice cream as well). I also love adding in fresh blueberries to the batter.
Serves hearty portion for two people
1 1/2 cups flour
3 1/2 tsp baking powder
1/2 tsp salt
2 tsp sugar
1 1/2 cup milk (any type) or buttermilk
1 large egg
3 TBsp oil (canola, avocado or olive)
1 tsp vanilla
In a medium sized bowl mix dry ingredients then add in wet ingredients and mix until just combined and lump free. Using a 1 cup measuring cup, pour batter on to oiled griddle or non-stick pan on medium heat. Cook until you start seeing bubbles break through on the uncooked side, flip and cook for another 2-3 minutes. Top as desired. Enjoy.
