Taco Soup
This recipe comes from my favorite soup recipe as a kid. I’ve made just a few adjustments over the years from the original. Perfect for a chilly fall or winter evening. This recipe will serve 4 people.
1 LB ground meat (chicken, turkey or beef)
1- 14.5oz can petite dice tomatoes
2- 15.5oz cans of beans (pinto, black, cannellini or kidney), rinsed and drained
1- 15oz can corn, drained
2 poblano peppers, seeded and diced
1 large onion, diced
2 packets Taco seasoning
Sour Cream
Cilantro, small handful
2 Scallions, diced
In a large pot cook the pepper and onion in a little oil until soft, add your ground meat and cook until browned. Add the tomatoes, beans, corn and Taco seasoning. Add just enough water to cover and let simmer for 30 minutes. Ladle into bowls and top with a dollop of sour cream, cilantro and scallions. Goes great with warm tortillas, cornbread or tortilla chips. Enjoy!
