In a word, this soup is Delicious! You’ll be shocked by how easy it is to make and how people will come back for 2nd & 3rd helpings.

 

Makes 4 servings (I always triple this recipe and freeze any leftovers. Thaw & reheat-Yum! )

 

 4-6 cups chicken broth

1/2 cup heavy cream or milk (you choose)

3 large russet potato, bite size pieces

4 cups kale, bite size pieces

1 LB Italian Sausage (spicy or mild, you choose)

Salt to taste

1/2 tsp crushed red pepper flakes (optional)

 

In a large pot brown sausage, while cooking wash and cut potatoes and kale into bite size pieces. You can leave the peel on the potatoes. Once sausage is cooked add potatoes, kale, broth, pepper flakes. Simmer for 30 minutes, stirring occasionally. Add heavy cream last minute or two of cooking. Salt to taste. Serve with a crusty garlic bread. Enjoy!
